Wild Mushroom Risotto

1 cup Arborio Rice 

.5 each Yellow Onion

3 each Garlic Cloves 

4 cups Chicken or Vegetable Stock

3 cups Mushroom mix (Cremini, Oyster, and Enoki Work Well)

2 cups Spinach

2 Tbsp Butter

2-4 each Thyme Stems, fresh

2 oz White Wine

3 Tbsp Parmesan Cheese

1 each Lemon

Olive Oil As Needed

Salt & Pepper To Taste

    Have a medium sauce pot, large sauté pan or skillet, and a wooden spoon handy.
